A Sushi Master

A chef specializing in sushi has become a master chef. An Hyo Joo (38), a Hotel Shilla chef had a dream to be a boxing champion in his early days. He boxed competitively in high school and won many championships. However, just before his debut as a professional boxer, he caught a serious cold and could not participate in his bout. He then had to serve in the army not long after that and his boxing dream fell by the wayside.
In 1984, he started to learn the art of cooking in a Japanese restaurant after he finished his army service. An said, 'I was really captivated by the sensitive nature of sushi foods. Boxing and cooking seems to be very different at a glance but they share common points in the aspect of emotional sensitivity or controlling your emotions .' 'Cooking needs craftsmanship. A master-hand cannot be achieved only by technique.' He published a book titled 'This is Japanese Food'. His next target is to make new sushi along the lines of traditional Korean food.
