In the middle of summer, patbingsu patrons can’t get enough of it in both styles: traditional and exotic dishes with a variety of toppings. Customers sample cheese bingsu and Injeolmi (rice cake) Toast at Busan’s iconic dessert shop Sulbing.

Patbingsu season is back and better than ever! Pat (red bean paste) bingsu (shaved ice) is a quintessential summer dessert in Korea. Fluffy, cool shaved ice provides enough relief, but when it’s topped with sweet red bean paste or tteok (rice cake), it makes for an even better snack. A variety of different kinds of bingsu exist - dishes with ice cream, fruit and cake, for example. Below are some of the best bingsu joints in Busan that serve up these tasty treats.

□ Sulbing
Sulbing made Busan’s top 10 hit items of 2014, a testament to its immense popularity.
Debuting in 2013, in Nampo-dong, the Korean dessert cafe revolutionized the landscape of the country’s bingsu scene by upgrading it.
Now, bingsu has become a dessert loved by all, regardless of the season.
Sulbing’s signature menu item is its Injeolmi Bingsu, in which frozen milk is finely shaved like snowflakes. On top, a variety of all-time favorite toppings are added, namely injeolmi (a type of rice cake) and bean powder.
Another customer favorite is Injeolmi Toast, a sandwich with injeolmi inside. Savory rice cake is inserted like cheese between two pieces of bread, while the toast is sprinkled with scrumptious grain powder.
Soft-textured bread, when paired with chewy injeolmi, is a fantastic combination. Both items boast off-the-charts taste, and their creamy texture is highly sought out by foreign tourists and locals alike.
Customers may also choose among a wide array of toppings - strawberries, chocolate, mango and cheesecake - not to mention blueberries and caramel ice cream. Sulbing has since experienced phenomenal growth, branching out to 150 stores in Korea and even in China.
Injeolmi Bingsu is 7,000 won ($6), Cheese Sulbing is 9,000 won and Injeolmi Toast is 4,500 won.

□ Yonghodong Halmae Patbingsu
This joint is touted as the No. 1 go-to place for patbingsu in Busan, located in the alley across from Igidae, Yongho-dong, Nam-gu (district), and competes on cheap prices and locally procured red beans. There are only two items on the menu - patbingsu and danpatjuk (sweet red bean porridge) - for 2,500 won each.
Its patbingsu is stripped down to bare minimum, and top-shelf apples harvested in Korea are used to make apple jam, added to sweeten the pot. Also not to be missed is danpatjuk, whose sweet taste is enhanced by chewy rice cake.

□ Nokcha (green tea) Patbingsu
This place is known for adding green tea powder to its patbingsu, which features shaved ice and plenty of bean paste toppings.
The ice is shaved the old-fashioned way, and red beans are boiled in its kitchen to make the paste. Finally, green tea powder is added, which is supplied from Boseong, an area famed for its tea. The patbingsu and danpatjuk are each 2,500 won. Complimentary green tea is served after the patbingsu to cleanse customers’ palates.
