This jajangmyeon (black bean noodles), whose televised appearances have made it famous, lives up to its hype. The jajang (fried black bean sauce) is flavorful and lighter than more conventional iterations of the dish - light enough to see the noodle beneath the saucy veneer, but appetizing enough to want to finish the bowl. The noodles boast a subtle texture and blend seamlessly with the pork and sauteed white onion and garlic they play host to. The dish pairs well with jjamppong (spicy seafood noodle soup).
