Haevichi Hotel & Resort Jeju

: The Haevichi Hotel & Resort Jeju appointed Paul Semboshi as the new executive chef of its French fine dining restaurant Milieu.

Japanese-born Paul Semboshi is a graduate of Paris’ illustrious Le Cordon Bleu academy. Chef Semboshi built his a career in France after 11 years in the kitchens of leading chefs, such as Eric Frechon and Eric Briffard, both holders of the prestigious Meilleur Ouvrier de France (MOF) title.

Chef Semboshi’s career encompasses work at restaurants in several premier Parisian hotels, including the Ritz Paris, Le Bristol and the Four Seasons. At the Four Seasons, he was the first Asian appointed to the position of sous-chef, an achievement that testifies to his exceptional talent.

At Milieu, Jeju’s only French fine dining restaurant in a hotel, chef Semboshi will serve his own unique new dishes, based on years of experience gained in Paris, the city at the cultural heart of French cuisine. His dishes will combine traditional French techniques with the finest seasonal Jeju produce, using a variety of culinary skills to accentuate the natural flavors of each ingredient.

“I’m delighted to have the chance to present innovative and authentic French cuisine at Milieu on Jeju, an island abundant in fresh ingredients and with a beautiful environment and culture,” said Chef Semboshi. “I plan to serve a range of unique, high-quality dishes based on my experience gained in France, where I found deep knowledge and inspiration in cuisine.”

Milieu opened in 2015. It has an open kitchen, with 12 bar seats and five private dining rooms. Private dining rooms feature a distinctive cocoon shape arranged around indoor gardens inspired by Jeju’s unique Gotjawal forests, producing a refined and romantic ambience. Bar seats are arranged around the open kitchen, conveying the vibrant atmosphere of chefs at work. Milieu is open daily from 6 p.m. to 10 p.m. and closed on Mondays. Advance reservation is recommended due to limited capacity.

: The Courtyard by Marriott Seoul Times Square’s all-day dining restaurant MoMo Cafe has completed an extensive renovation and welcomes visitors. Well known for its semibuffet style, the restaurant now offers an elevated full-buffet experience, featuring modern-style seating and a locally-inspired menu.

The renovated MoMo Cafe offers authentic Korean items such as beef tartare, soy sauce marinated crab and seafood dishes such as fresh sashimi, sushi, abalone and more in the island kitchen buffet.

Soup with puff pastry is served to every guest as a welcome appetizer, and guests can order a dish of pasta with three different sauces (tomato, oil or cream).

Newly added items include raised grilled station meats such as rib eye, LA galbi (Korean-style grilled beef ribs), a roast leg of lamb and Iberico pork belly.

The noodle station offers rice noodles with a base of beef leg bone broth, and two distinctive styles of beef bulgogi (grilled marinated meat) and spicy shrimp are suggested. Its upgraded hot food corner presents various unique oriental dishes, such as nasi goreng (Indonesian stir-fried rice), beef stew, fried rice noodle, pad thai and more. Various Western selections are offered to our guests, such as gorgonzola polenta cake, bouillabaisse (French fish stew), shrimp gambas and much more.

The dessert section has been moved to near to the buffet station, showcasing pavlova with strawberry, fusion style injeolmi (type of Korean rice cake) brownie, red velvet cake and lemon cake. Various sweets with seasonal ingredients and colorful designs will catch the eye of female guests in their 20s and 30s who love desserts.

During weekdays, a lunch buffet is offered for 42,000 won ($39) and a dinner buffet is 55,000 won. The brunch and dinner buffet for the weekend is offered at 65,000 won, including tax and service charge. Unlimited sparkling wine is offered only for weekend brunch buffet guests.

Also, for an additional 19,000 won per person during weekdays and the weekend dinner buffet, guests can enjoy 10 different kinds of free-flowing wine.

: European-style luxury hotel Le Meridien Seoul has become the sole Korean property to be featured in international travel magazine Conde Nast Traveller’s 2018 list of the “102 Best New Hotels in the World.”

Each year Conde Nast Traveller, widely acknowledged as the world’s most authoritative travel magazine, compiles a list of newly-opened hotels around the world, subject to rigorous criteria. Of the 102 properties selected this year, 13 were in Asia, and only one ? Le Meridien Seoul ? was in Korea.

Conde Nast Traveler’s review described Le Meridien Seoul as “a hotel for enjoying culture and art, with a striking mid-century design by David Collins Studio, a lobby full of contemporary art, and an art gallery on the lower level.” It lavished praise on the Le Meridien Seoul’s glass-enclosed rooftop pool and onsen (Japanese-style sauna) complex, calling it a beautiful hotel with an unbeatable location in the center of Gangnam offering views across Seoul.

The review also cited European-style luxury all-day dining restaurant Chef’s Palette and happy hour at Club Lounge as unmissable attractions. The buffet at Chef’s Palette serves healthy dishes from a variety of European countries in a course style. Wines are paired with the luxurious Mediterranean buffet-style fare, while an additional dessert selection at dinner has proved highly popular among female diners. The review called Le Meridien Seoul a luxury hotel that will satisfy international jet-setters, business travelers who want to squeeze in a bit of fun art and culture on the side and Koreans splurging on the weekend.

Conde Nast Traveller chose Le Meridien Seoul not just for its facilities but also for its service, views and other unique features.
