A generous portion of fine buckwheat noodles towers at the center of a beautiful copper bowl and is adorned with three razor-thin slices of beef and two mandolin-sliced pieces of radish.
The radish boasts the broth’s delicate, savory flavor, appearing simultaneously light and juicy. Meanwhile, the broth itself is understated and refreshing, reflecting the flavors of both the noodles and the chive, white onions and fresh cucumber that dot its surface.
Be sure to ask for spicy paste to further enhance the broth - the staff will gladly provide you with sweet chili sauce.
