Buckwheat noodles don’t come any more genuine than at Yangyang, and only after you order does the owner make the noodles and cook them. Made of 90 percent milled buckwheat and 10 percent whole, the noodles are served in iced beef broth with dried seaweed and sesame seeds. Their distinct toothiness stands up to any vinegar, mustard or chili sauce you load on them.
