The final item on the menu at Parkgane, one of the grand old dames of Gwangjang market’s famed food section, is janchi guksu. Order it instead of the signature bindaetteok (mungbean pancakes), which are cold and greasy. Thin somen wheat noodles are topped with strips of omelet and Korean fish cake, flecks of seaweed and carrot and zucchini juliennes, all floating in a broth so spicy and robust one feels like celebrating, which is apropos because janchi guksu are Korea’s banquet noodles.
