Rice revolution comes to dinner tables: Local consumers are developing a more sophisticated palate for their daily bowl

Koreans today are paying more attention than ever to the quality of the rice they eat.

Although the total volume of rice consumption has fallen due to the rise of single-person households and busy lifestyles, the desire to make those rare meals at home worthwhile has grown.

From stocking premium rice varieties to designing eye-candy packaging, rice companies are coming up with creative ideas and services to meet the demands of their millennial consumers.



Premium rice stores

“Try the ‘Youngmi Jinmi’ if you like soft and crumbly rice. If you prefer savory aromas and tastes, I recommend the ‘Golden Queen No. 3.’”

Employees at Hyundai Rice House, a premium rice store at Hyundai Department Store’s main branch in southern Seoul, were busy introducing shoppers to different varieties of the beloved grain one October afternoon.

“I heard they sell better tasting rice here than in regular supermarkets,” said 30-year-old Choi Mi-hye, one of the shoppers at the store. “I didn’t know that there were so many kinds of rice, but I’m planning to try a little bit of each.”

Premium rice sellers like Hyundai Rice House have been opening stores and websites in the last two years to satisfy rising demand for quality rice, especially from young mothers.

These businesses sell a wide array of rice varieties that they directly purchase from farmers. They often provide customers with detailed information on the features of each type and its optimal cooking methods, working together with so-called rice sommeliers for added expertise.

Not only that, many rice stores are now offering rice in smaller-sized bags to cater to single or two-person households. Stores like Dongnae Jungmiso, which translates to “neighborhood rice mill,” even sell simple Korean meals using the rice in store, providing shoppers with practical and tasty tips on which side dishes to serve together with their products.



Pretty packaging

As with any business targeting young customers, trend-conscious rice stores are putting a lot of focus on their packaging.

Premium sellers offer rice in bags weighing as little as 400 grams (14.1 ounces) and up to 1 to 2 kilograms, taking care that the packaging is designed to please millennial aesthetics and needs. In contrast, rice sold in regular supermarkets often comes in 10 kilogram-sacks and features huge logos and images of wheat, rice bowls or even the farmers themselves.

“Rice trends today can be summarized as ‘same-day [rice] polishing,’ ‘vacuum-packed’ and ‘small quantities,’” explained Lee Yong-in, co-CEO of online rice seller Rice Factory. Lee’s company packs its rice in plain brown or white paper bags that only show the business’s name in a small font.

Even the fashion world is getting in on designing rice bags. Sejung Corporation, which operates clothing line Olivia Lauren, recently rebranded one of Yongin’s regional rice varieties, wrapping it in a square, compact 500-gram package illustrated in clear, white minimalist designs for sale at its shopping complex Dongchoon Market.

Collaborating with the Yongin City Agricultural Technology Center and a local farm, Dongchoon even produced handy 30-gram multi-grain mixes - much like coffee sticks - that consumers can add to plain white rice for some added nutrition and color.

Although the total volume of rice consumption may be declining, premium sellers have seen their profits grow.

“Many of our online customers are young housewives and orders continue to increase. We secured 40 tons [of rice] this year, twice as much as last year,” said Shin Min-wook, who co-heads Rice Factory. The business has sold nearly 20 tons of rice so far this year.

Last year, Hyundai Department Store also reported that what it categorized as “premium rice” saw an 18.1 percent growth rate in revenue compared to the previous year, while the average growth rate for rice fell 2.7 percent during the same period.



Variety over location

The rice paddies of Icheon and Yeoju in Gyeonggi and Cheorwon in Gangwon have been Koreans’ preferred rice producers for a long time. They still continue to be, but consumers are increasingly paying more attention to rice varieties and the different aromas, sizes and textures they produce.

Bop-up Store, a spin on “pop-up store” and the Korean word for rice, is an event held by food consultant Rice and Company that invites around 100 rice lovers to taste, compare and grade different varieties. Healthy side dishes are ready at the table to offer extra flavors.

“We organized this event because this is an era where people choose rice based on personal preference like coffee,” explained Kim Ha-neul, head of Rice and Company.

“Koreans usually prioritize the glutinosity, luster and sweetness of rice, but tastes are becoming more specific these days.”

With over 1,450 native Korean rice types on record, it appears that Bop-up Store fans won’t run out of varieties to test for a long time. Some 285 new varieties have been additionally developed since the establishment of the Rural Development Administration in the 1960s.

“I started farming because I felt attracted to the differences in the shape, color and history [of rice varieties], but my work has only led me to become more curious about the charm and taste of Korean rice,” said farmer Lee Geun-yi, who experiments with growing over 200 native wheat types in Gyeonggi.

The attention to rice variety extends to restaurants as well.

Michelin-recommended fine dining restaurant Mugunghwa in Lotte Hotel Seoul has been relying on Super Oning rice since 2010. A hybrid of the Koshihikari and Akibare varieties produced in Pyeongtaek, Gyeonggi, Super Oning was chosen only after testing that it was sweeter and more lustrous than others.

“Super Oning has superb luster and glutinosity that makes it not only look good, but gives the right balance of sweet and savory,” said chef Oh Tae-hyun. “Rice made with this variety goes well with seasoned side dishes.”

Lak Hee Oak, a restaurant franchise that serves modern Korean cuisine, uses the Shindongjin variety of rice from the Jeolla region.

“We used rice made with Golden Queen No. 3 in the past, but we changed to Shindongjin because it has a nice oily and savory quality,” said Kim Sun-hee, the franchise’s CEO. “Although rice is not on the main menu, the taste of rice is important in influencing the customers’ decision to come again.”



Picking the perfect rice

What is the secret to choosing the perfect rice then?

While the ideal variety differs for each consumer depending on preference, it’s always a safer bet to buy a single variety rice instead of mixed grains, says Rice and Company’s Kim.

“There are some brands that mix the varieties well, but mixed grains usually have poorer texture and taste,” she said.

Within the same variety, rice that has been harvested early and are recently polished are the most delicious. Storing rice in an air-tight container inside your fridge is also a good idea.

“I recommend people to consume rice within the first month it has been polished,” Kim added. “It’s best to estimate how much rice you’ll eat in a month before purchasing it.”

자고로 “한국인은 밥심”이라 했다. 김이 모락모락 피어오르는 뜨끈한 쌀밥 한 공기에는 저항할 수 없는 매력이 있다. 윤기가 자르르 흐르고 씹을수록 찰기가 생기는 밥은 어떤 반찬을 가져다 놔도 한 그릇을 뚝딱 비울 수 있다. 밥 한 숟가락 떠서 잘 익은 김치 한 조각과 바삭하게 구운 김 한 장을 얹기만 하면 다른 산해진미가 필요 없다.

현대판 싸전 '쌀 편집매장' 등장
“부드럽고 고슬고슬한 밥을 좋아하시면 ‘영호진미’를 드시고요, 구수한 누룽지 향과 맛이 좋으면 ‘골든퀸3호’가 좋아요."
지난 10월 24일 현대백화점 본점 지하에 있는 쌀 편집매장 ‘현대쌀집’을 찾았을 때 들은 직원의 설명이다. 이곳을 찾은 30대 주부 최미혜씨는 “마트에서 파는 일반 쌀보다 더 맛 좋은 쌀이 있다고 해서 왔다”며 “쌀 종류가 이렇게 많은지 몰랐는데, 이것저것 조금씩 사서 먹어볼 생각”이라고 말했다.
최근 쌀에 대한 관심이 높아지고 있다. 1인 가구가 늘고 바쁜 생활 탓에 집밥을 먹을 기회가 점점 줄면서 쌀 소비량도 줄고 있지만, 그만큼 ‘제대로 된 한 끼’에 대한 욕구는 커졌기 때문이다. 이를 반영하듯 최근 1~2년 사이 현대백화점의 현대쌀집 외에도 수원의 ‘동네정미소’, 온라인 쌀 편집숍 ‘도정공장’ 등 다양한 쌀을 소개하는 쌀 편집매장이 속속 등장했다.
이들은 농부와 직거래한 다양한 종류의 쌀을 판매하면서 쌀 품종과 효능, 맛있게 먹는 법 등의 정보를 제공한다. 소비자가 취향에 맞는 쌀을 고르는 데 도움을 줄 수 있도록 ‘밥 소믈리에’라 불리는 쌀 감별사에게 컨설팅을 받고(현대쌀집), 판매하는 쌀로 밥을 지은 식당도 함께 운영한다(동네정미소). 무엇보다 다양한 품종의 쌀을 원하는 양만큼 소량 구매할 수 있기 때문에 1인 가구와 맞벌이 부부에게 인기가 높다.

쌀 포장은 작고 예쁘게
이들은 바로 도정한 쌀을 작게는 2~3인분에 맞춰 400g 내외로, 많게는 1~2kg 단위로 포장해 판다. 포장 또한 밀레니얼 세대의 구미에 맞게 예쁘고 고급스럽게 만드는 데 신경 쓴다. 이용인 도정공장 공동대표는 “최근 쌀 트렌드는 당일 도정, 진공포장, 소포장 등으로 요약할 수 있다”며 “이왕이면 예쁘게 만들고 싶어 패키지 디자인에 공을 들였다”고 말했다.
지난해 패션기업 세정이 용인에 만든 라이프스타일 편집숍 ‘동춘상회’는 첫 번째 프로젝트인 ‘잘 먹기 프로젝트’를 진행하면서 용인 지역에서 생산하는 백옥쌀을 500g씩 포장한 쌀 브랜드 '백옥미'를 선보였다. 올해는 용인의 햇살농장과 함께 협업해 찰흑미·현미·찹쌀 등 5가지 잡곡을 혼합해 커피믹스 1개 크기의 스틱 형태(미미한봉)로 만들어 내놓기도 했다. 최근엔 매장에 도정기를 설치하고 참드림 쌀을 즉석에서 도정해 판매하는 행사를 벌였다.

소포장 쌀의 판매량은 꾸준히 늘고 있다. 도정공장의 경우 올해에만 쌀을 20톤 가까이 팔았다. 신민욱 공동대표는 “온라인 특성상 주로 젊은 주부 고객들이 많은데, 주문량이 계속 늘고 있어 올해에는 지난해의 2배인 40톤을 확보했다”고 말했다. 프리미엄 쌀도 잘 팔린다. 지난해 현대백화점에서 발표한 쌀 매출 신장률은 2017년 동기 대비 2.7%가 줄었지만, 가격이 상대적으로 비싼 프리미엄 쌀의 매출 신장률은 18.1%로 늘었다.

지역 보다 품종
이제 이천·여주·철원 등 기존의 지역 명성만으론 부족하다. 최근엔 맛과 향, 크기, 씹는 맛 등 자기만의 색깔을 가진 ‘품종’을 따져 먹는 추세다. 일본 개량종인 고시히카리나 아키바라 외에도 국내에서 개발한 해들·신동진·영호진미·골든퀸 등과 올벼·해조·북흑조 같은 토종 쌀에 대한 관심이 높아졌다.
다양한 품종의 쌀로 지은 밥을 지어 함께 먹는 이벤트 ‘밥업 스토어’에는 매번 100명 이상이 모일 정도로 반응이 뜨겁다. “이제 쌀도 커피처럼 취향 따라 먹는 시대가 됐다는 생각으로 한 번에 3가지 품종의 쌀로 밥을 지어 식사 자리를 만들고 있다”는 김하늘 라이스앤컴퍼니 대표는 “한국인의 밥 취향은 찰기와 윤기, 단맛을 중시하는데, 요즘엔 취향이 더 세분화됐다”고 말했다. 지난 6월엔 경기도농업기술원과 협업해 신품종 쌀 참드림·맛드림·가와지로 밥을 지어 선보였는데, 참가자들이 어느 한 가지 쌀로 몰리지 않고 세 가지 쌀을 고르게 선택하는 결과가 나왔다.
쌀 품종이 과연 얼마나 많을까 싶지만, 1960년대 농촌진흥청이 설립된 후 국내에서 개발한 품종만 285종이다. 개량종이 아닌 토종 쌀 품종도 1450종에 달한다. 경기도 벽제에서 토종 벼 200여 종의 재배 실험을 하는 ‘우보농장’의 이근이 농부는 “모양·색·역사가 다른 것에 매력을 느껴서 농사를 시작했는데, 할 수록 우리 쌀의 멋과 맛에 빠져든다"고 말했다.
식당들도 쌀 선택에 신중해졌다. 롯데호텔 서울(소공동)의 한식당 ‘무궁화’는 2010년부터 경기도 평택에서 나는 슈퍼오닝 쌀을 사용한다. 고시히카리와 아키바리를 혼합해 만든 쌀 브랜드로, 선택 당시 여러 종의 쌀로 밥을 지어 블라인드 테스트를 진행해 찰기·단맛·고소한 맛 등의 항목으로 나눠 평가하고 가장 좋은 점수를 받은 것을 선택했다. 이곳의 오태현 조리장은 “슈퍼오닝은 밥의 윤기·찰기·탄력이 뛰어나 보기에도 좋고, 적당한 단맛과 고소한 맛이 일품”이라며 “이 쌀로 밥을 지으면 간이 된 반찬과의 조화가 좋다”고 선택 이유를 밝혔다.
한식주점 ‘락희옥’은 전라도에서 생산한 신동진 쌀로 밥을 짓는다. 3대째 쌀 유통업을 하는 서부농산에 주문해 바로 도정한 쌀을 받는데 이마저도 3~7일 이내에 손님에게 낸다. 김선희 락희옥 대표는 “전에는 골든퀸3호로 만든 백세미를 썼는데, 지금은 신동진이 기름지고 풍미가 좋아 이것을 쓰고 있다”며 “밥이 주요 메뉴는 아니지만, 밥맛이 좋지 않으면 손님이 뚝 끊길 정도로 밥맛이 중요해 쌀에 신경을 많이 쓴다”고 강조했다.

맛있는 쌀 고르는 법

그렇다면 맛있는 쌀은 어떻게 고를까. 김도균 동네정미소 공동대표는 “커피랑 비교하면 쉽다”고 설명했다. 맛있는 원두가 따로 있는 것처럼 쌀도 좋은 품종을 골라야 한다는 얘기다. 품종은 가급적 혼합된 것보다 단일 품종을 선택하는 게 실패할 확률이 낮다. 라이스앤컴퍼니 김 대표는 “배합을 잘한 쌀 브랜드도 있지만, 보통 혼합미는 식감이나 맛이 떨어진다”고 귀띔했다.

같은 품종의 쌀이라면 수확 시기가 빠르고 갓 도정한 게 가장 맛있다. 동네정미소 김 대표는 “10월부터는 올해 수확한 햅쌀이 나왔으니 그것을 선택하되 15일 이내에 도정한 쌀을 선택하는 게 좋다”고 추천했다.
갓 도정한 쌀은 밀폐된 용기에 넣어 냉장고나 김치냉장고에 넣어두는 게 좋다. 상온에 몇 개월씩 방치하면 맛이 변하고 변질될 위험이 있어서다. 김 대표는 이어 “도정 후 적어도 한 달 이내에 먹길 권한다. 쌀을 살 때 한 달 소비량을 계산해서 그 만큼씩만 구매해 먹는 게 가장 좋은 방법”이라고 강조했다.
