Jeju Island is well known as a tourist destination and as a place for honeymooners to begin a fruitful marriage, but one thing the province is not famous for is its cuisine. Few Koreans can name a single dish that’s indigenous to this volcanic island, which lies 85 kilometers (52.8 miles) off the coast of South Jeolla.

제주도는 관광 목적지로서, 그리고 신혼 여행지로서 잘 알려져 있다. 하지만 요리로는 그다지 유명하지 않다. 전라남도 해안에서 85㎞ 떨어져 있는 이 화산섬의 고유한 음식 이름을 한 가지라도 댈 수 있는 한국인은 많지 않다.

They might be able to point out some of the different types of fish that reside in the surrounding waters, but it’s safe to say Jeju food has not set the world on fire. In many ways, the food there reflects the island’s geographic isolation. Dishes are characterized by culinary simplicity and the use of plenty of seafood.

제주 근해에 사는 물고기 몇 가지를 아는 사람도 있을 것이다. 하지만 제주 음식은 아직은 그 이름을 떨치지 못했다고 보는 편이 맞다. 여러 면에서 제주 음식은 제주도가 지리적으로 격리돼 있었음을 일깨워준다. 제주 음식은 조리법이 간단하며, 풍부한 해산물을 재료로 쓴다는 점이 특징적이다.

The land is not overly fertile and the rocky terrain is not suitable for farming. Even though the climate is mild and the air seems much fresher than in the urban areas of Korea, food has been scarce in this part of the world throughout history. To brave the strong winds and tough living conditions, Jeju people have adapted.

제주도의 토양은 비옥하지 않다. 돌투성이인 땅은 농사를 짓기에 부적합하다. 기후가 온화하고 한국의 도회지보다 공기가 훨씬 신선하게 느껴지지만, 긴 역사 동안 제주도에선 음식이 매우 귀했다. 제주 사람들은 강풍과 맞서고 척박한 생활여건을 극복하기 위해 적응해왔다.

There is even a saying on the island that people ate whitesaddled reef fish as a substitute for rice when food was scarce in spring. In the old days, grains were often used instead of rice, a more precious commodity, and spices were also rare. Instead of seasonings, materials at hand such as fish products and herbs were used.

음식이 부족한 춘궁기(春窮期)에 제주 사람들은 쌀 대신에 자리돔을 먹었다는 말이 있을 정도다. 옛적에 육지 사람들이 쌀이 떨어지면 쌀 대신 다른 곡물을 먹었던 것에 견준 것이다. 제주도에선 양념도 매우 드물었다. 그래서 조미료 대신에 해산물과 채소로 음식 맛을 내곤 했다.

This explains why Jeju cooking is somewhat bland compared to its spicier cousins on the mainland. Take cold soybean paste soup for example. It’s a simple combination of water and soybean paste, which may seem odd to people from other provinces because of its sheer simplicity.

이 때문에 제주 요리는 한반도 육지 음식과 비교하면 덜 자극적인 편이다. 된장냉국을 예로 들어보자. 제주의 된장냉국은 단순히 물에 된장을 푼 것이다. 이런 단순함 때문에 한국의 다른 지역 출신의 사람들에게는 낯설게 보일 수 있다.

“Soybean paste is often used in Jeju food,” said Jeong Hye-seon, the owner of Jeju Tukbaeki, a Jeju-themed restaurant in southeastern Seoul. One of the more famous Jeju dishes, among islanders at least, is soybean paste soup with small abalone, shrimp and shellfish.

“제주 음식에는 종종 된장이 쓰입니다” 제주 특화 음식점인 ‘제주뚝배기’의 정혜선 사장의 말이다. 제주 사람들 사이에서 인기 있는 제주 음식 중 하나는 전복·새우·조개를 넣은 된장찌개다.

In keeping with the rather Spartan image that accompanies Jeju food, it’s no surprise that the culinary methods tend to be uncomplicated. Jeju cooks will season broiled fish, such as cutlass, mackerel and sea bream, with nothing fancier than a just a pinch of salt.

*pinch : 한 움쿰

‘제주 음식’ 하면 떠오르는 간소한 이미지를 생각하면, 제주 음식의 조리법이 단순한 경향이 있는 것은 지극히 당연하다. 제주 요리사들은 갈치·고등어·감성돔 같은 생선을 구울 때에 그저 한 움쿰의 소금으로만 간을 맞춘다.
