[Cooking with Her Excellency, Ecuador]Shrimp ceviche
2 pounds of shrimp
1 mid-sized green pepper
1 tablespoon mustard
1/2 cup orange juice
1/2 cup lemon juice
2 mid-sized tomatoes
2 mid-sized red onions
8 to 10 green limes
1 glass of beer
2 garlic cloves, minced
2 cups of ketchup
1. Rinse shrimp and remove the veins.
2. Boil 2 cups of salted water and add the shrimp, boiling over medium heat for 5 minutes. Remove shrimp from the water and leave at room temperature to cool. Save the water and set aside.
3. Chop onions and combine with salt and lemon juice. Cut tomatoes, green pepper and cilantro into preferred sizes and add to the onion-lemon mix.
4. In a large bowl, combine all of the ingredients. Serve in cocktail glasses or small bowls. May serve with popcorn, fried plantains or tostado (fried corn) on the side.
