[NOODLE] Taiwan-style noodles put emphasis on beef

The noodles are thin and soft, the green onions thick and plentiful and the bowl on the small side, as if it holds a very special treat. That treat is the beef: full of flavor and cooked so long that all the connective tissues have become meltingly scrumptious. You get beef in every slurp. In fact, it wouldn’t be too much of a stretch to call this Taiwanese-style beef noodle stew.
