Mijin specializes in memilguksu, buckwheat noodles served cold in the Gangwon style. Each portion is a stack of two lacquer trays of noodles. From a steel kettle, pour salty broth into a bowl and dip your noodles. The key to satisfaction is to load the broth with grated radish, green onion, flakes of dried seaweed and wasabi sauce - a rich combination of sweet and savory flavors.
