Pildong Myeonok, a second-generation offshoot of pioneer naengmyeon (buckwheat noodles in cold broth) restaurant Uijeongbu Pyongyang Myeonok, combines chilled dongchimi (radish kimchi water) and fresh, albeit chewy, buckwheat noodles for a classic, savory effect. Completing the ensemble are two slices of lean, salty beef, white radish, chives and spicy green pepper. The presentation is completed with the restaurant’s trademark gochugaru (Korean chili powder) garnish.
The dish is also available in a bibim (mixed) version, and the flavor can be altered by a slew of condiments on the table that include mustard, soy sauce, vinegar and gochugaru, or red pepper flakes.
