Chakalaka (vegetable relish)
Ingredients:
45 milliliters (¼ cup) canola oil or olive oil
1 mid-sized onion, grated
2 mid-sized tomatoes, skinned roughly and chopped
1 clove of garlic, crushed
1 green pepper, deseeded and chopped
1 green chillies, deseeded and chopped
10 milliliters (2 teaspoons) curry powder
1 teaspoon turmeric
1 mid-sized carrot, grated
400 grams (1 ¾ cups) canned baked beans in tomato sauce
Salt and black pepper
Serves 4
1. In a pot coated with oil, cook green pepper, green chillies,
onions, garlic, turmeric and curry powder for 5 minutes in low heat.
2. Add in the carrots and tomatoes. Cook for 15 more minutes, or until the veggies are well cooked.
3. Add the beans and rest of the ingredients, and cook in low heat for 3-4 minutes.
4. Serve in a bowl either warm or cold. If desired, you may add mealie pap (maize porridge), barbecued lamb chops, sausage or bread on the side.
