Park Hyatt Seoul
Through Sept. 6: The Lounge, the luxury lifestyle destination on the 24th floor of Park Hyatt Seoul, presents "The Taste — Boyangsik Dinner Set", a menu inspired by Korea’s seasonal tradition of revitalizing summer Boyangsik dishes, from June 9 to September 6. Comprising of five courses, the dinner set is a celebration of seasonal abundances crafted from nourishing ingredients including Korean-grown deodeok root, chicken and abalone. A further culinary highlight is the unique dessert course, a creative reinterpretation of traditional snacks that brings together sweet red bean jelly, mugwort mousse and soybean flour crumble. The menu is priced at 100,000 won ($84) per person (including tax; no service charge applies). For a supplementary price of 40,000 won per person, dinner is served with two glasses of paired wine and one glass of traditional Korean liquor Gangjang Baekseju. Early reservations are particularly recommended for Aug. 15, one of Korea’s three bok days, the summer days on which Boyangsik cuisine is traditionally enjoyed. The other two, July 16 and 26, have already passed.

The dinner set menu commences with a unique interpretation of the summer dish Chogyetang (chicken in a cold broth with vinegar and mustard), made with chicken and ginseng rolls. The chicken, marinated in soy sauce with star anise and other spices before being rolled with ginseng, strikes a uniquely refreshing flavor balance with the cool mustard broth. Deodeok Root Tempura and Vinegar Chili Paste is served with tenderly chewy Conch Skewers as an invigorating summer appetizer. The main course brings a choice of Grilled Korean Hanwoo Ribs with Garlic Soy Sauce, served with Napa Cabbage Geotjeori Salad and Fresh Chamnamul Greens in Dressing; or tender Deep-fried Sea Bream Wrapped in Kadaif Noodles and served with homemade Melon and Chili Sauce for an exceptional blend of sweet and spicy aromas. The following course features Doenjang Mulhoe, a soup of abalone, squid and other seafood and vegetables in a doenjang bean paste-based broth, accompanied by seasonal side dishes and multigrain rice. The final course is a dessert of Mugwort Mousse, flavored with white chocolate, topped generously with sweet red bean jelly, garnished with soybean flour crumble and juxtaposed with yuja meringue and orange biscuits for a sublime combination of astringent mugwort fragrance and sweet contrasting notes.

The Boyangsik Dinner Set menu may be accompanied by a carefully curated selection of beverages, for a supplementary price. Appetizer and main courses are paired with two glasses of different selected wines and one glass of Gangjang Baekseju, a traditional liquor crafted from some 10 medicinal herbs and ingredients.
