Steve Lee, 31, is one of a growing number of local chefs establishing Korean fine dining as something more than a passing fad in the competitive Hong Kong food scene.

Last month, Michelin Guide Hong Kong and Macau recognized him as a rising chef in the region with the Young Chef Award. He is the head chef at Hansik Goo, the first Korean restaurant in Hong Kong to acquire one-Michelin-star status.

지난달 미쉐린 가이드 홍콩 & 마카오는 이상근 셰프를 지역의 라이징 셰프로 선정하고 영 셰프 상을 수여했다. 그는 홍콩에서 최초로 미쉐린 1스타를 받은 한식 레스토랑 한식구의 헤드 셰프다.

Lee recalled feeling “shocked and surprised” on the day he learned he had received the Young Chef Award. “Even as I walked up on stage to get the award, I couldn’t believe it,” he said during a Zoom interview with the Korea JoongAng Daily in May. “I truly appreciate [the recognition] and am very grateful for the chefs’ respect.”

이상근 셰프는 자신이 영 셰프 상을 받는다는 사실을 알게 된 날 “충격과 놀라움에 휩싸였다”고 회상하며 “상을 받으러 무대에 올라가는데도 믿기지 않았다”고 코리아중앙데일리와 지난 5월 진행한 줌 인터뷰에서 말했다. 그는 또한 “이런 상을 주셔서 감사하고 셰프님들이 보내주신 존경에 진심으로 감사드린다”고도 전했다.

One important mentor for the up-and-coming chef is Kang Min-goo, the renowned Michelinstarred chef in Seoul who gave him his current job. Hansik Goo is Kang’s first international outpost restaurant.

Since he was a culinary school student who grew up watching cooking-themed Korean dramas, the idea of working with Kang was “a dream.”

요리 학교 학생 때부터 요리를 주제로 한 한국 드라마를 보며 자란 그에게 강민구 셰프와 함께 일한다는 것은 말 그대로 “꿈만 같은 일” 이었다.

“Chef Min-goo was already famous when I was a freshman [in university] so I had always wanted to work with him — and would constantly tell him so!” he said. The two attended the same school, Kyonggi University in Gyeonggi.

“강민구 셰프님은 제가 대학교 1학년 때 이미 유명하셨고 그런 분과 일하는 것이 당연히 제 꿈이었다고 지금도 계속 말씀드린다”며 강민구 셰프가 졸업한 경기대학교를 입학하고 요리를 배운 이유를 전했다.

Lee’s persistence paid off when he began working in the front of the house at Mingles, Kang’s two-Michelin-starred restaurant in southern Seoul, then subsequently in the kitchen.

이상근 셰프의 끈기는 강남구에 위치한 강민구 셰프의 미쉐린 2스타 레스토랑인 밍글스에서 시작하여 홀에서, 그 다음 주방으로 들어가게 되며 결실을 맺었다.

“The most memorable advice from Chef Mingoo came when I told him that I wanted to go to Australia,” said Lee. “He asked me a bunch of questions about Australia, its food and what I wanted out of the experience. But I couldn’t answer him because I hadn’t prepared properly. It sort of hurt [my ego] but it is advice that I still remember to this day and something that I tell junior chefs now as well.”

그는 “강 셰프님이 해주신 가장 기억에 남는 조언은 호주에 가고 싶다고 말씀드렸을 때”라며 “그 경험을 통해 무엇을 얻고 싶은지, 또 호주와 그 곳의 음식에 대해 수많은 질문을 던지셨는데 제대로 준비하지 못해 대답을 잘 못했다. 그 때 자존심에 조금 상처를 받았지만 지금까지도 기억에 남는 조언이자 후배 셰프들에게 해주는 조언”이라고 말했다.
